Beet and Strawberry Applesauce

My kiddos can be a little hard to please in the vegetable department. Which is why I came up with an applesauce recipe that would be fun to make together, delicious, and have a healthy kick.

INGREDIENTS
3 lbs of apples
1 medium carrot
3 beets (about 6 ounces)
1 lb of strawberries
1 cup of water (or apples juice or apple cider)
pinch of salt
honey to taste (optional)
SPECIAL KITCHEN TOOLS
immersion blender or blender
DIRECTIONS
Wash and dry the fruit and veggies.
Peel carrots and beets and chop up into roughly 1 inch.
Core apples and roughly chop, You can remove the skin, but I left it on for fiber. The skins do cook down.
Remove leaves from strawberries.
Add the veggies and fruit to a sauce pan of some kind that has a lid.
Add water, salt, and honey and stir to combine.
Bring everything to a boil. Simmer with lid on until everything is tender, 1.5-2 hours.
Let cool slightly.
Once slightly cooled, ladle in batches into a blender and blend until completely smooth. Alternatively, use an immersion blender and blend in the pot the applesauce cooked in. Be careful doing this with the hot mixture.
Let cool completely and store in covered container in the fridge for up to 5 days.
